Day Two: 2017.
So bearing in mind that bread is the number one source of food waste in New Zealand here is my cure. I've finally perfected my lazy bread making techniques this Chistmas break. The kids were agreed this was the best bread ever. Each loaf was devoured immediately with no left overs.
Added environmental benefits:
3 cups organic flour (white)
1 teaspoon yeast
1/2 teaspoon sea salt
3-5 sprigs of Rosemary
2 big slugs of organic olive oil
Mix all ingredients (except olive oil) adding enough water to form a soft sticky dough (err on the side of moist). Leave in an oiled bowl covered with a tea towel (overnight or for the morning). About 30mins to an hour before cooking tip out onto an oiled cooking tray or pan. Spread out to 1-2cm thickness and leave for up to an hour in a warm place.
Finally dimple the surface of the bread with your fingers, smooth olive oil over the bread, cut rosemary sprigs over the top and sprinkle gnerously with sea salt. Pop in the oven at 180C for approximately 30mins until golden. Great topped with avocado and tomato for an easy summer lunch. Enjoy.
